Ingredients
3 c. Gluten free all purpose flour—I used ‘Bob’s Red Mill’
3 tbsp organic olive oil
1 1/3 c. Lukewarm filtered water
1 tbsp monkfruit
1 tsp salt
2 tsp dry active yeast
Directions
In a large bowl, place your yeast and monkfruit in a bowl followed by your water. Mix together and let it sit until its frothy! Takes about 5-10 minutes. (You will see a frothy mixture at the top once it sat). Then add your flour, salt and 2 tbsp olive oil—(set aside 1 tbsp). Mix together until a shaggy dough ball forms. Place on a clean counter top and kneed together until a round dough ball forms. Make sure all clumps and bumps are out!
In another clean bowl, take your leftover tbsp of olive oil and spread it around your bowl. Then place your dough ball inside and cover it with plastic wrap. You’ll want to let it sit for an hour or two. But definitely let it double in size! Once it doubles, punch the dough in the middle from rising (the most satisfying part)..and take it out of a bowl and roll it again. Cut the dough in half and rolled it separately into two balls. Make it immedietly or place in freezer gallon bags—place in freezer until ready to use. It takes about 1 hour to unthaw when ready to use it!
